Balti cooking is the latest trend in Indian cuisine, very popular in the
midlands.This new style of cuisine andpresentation has many imitators

originatedcenturies ago in the Himalayanmountain region of Pakistani
Kashmir, in a provinceknown as Balistan.The cold, high altitude
atmosphere there demanded simple buteffective cooking methods.
Balti dishes are freshlyprepared and healthy becausethe rapid stir-fry
process retains the goodness of the food. The whole spices are
roasted and ground in our kitchen to create the aromatic, spice textures.
